This 2004 paper by Tim Lang is part of a Cultures of Consumption Working Paper Series. In the paper, Professor Lang explores the food consumer's experience in a time of food revolution, dating back to World War II. As he states in the paper, "food consumption is contested terrain and that these very different interpretations of the consumer’s food experience are driven by a food revolution, often in the name of the consumer, but now framing the consumer experience."
